Cauliflower Healthy Recipe

  • 2 medium heads of cauliflower cut into bite-sized florets
  • 1/4 cup aquafaba*
  • 1/2 cup polenta
  • 1/3 cup sesame seeds
  • 2 teaspoons garlic powder
  • 1 teaspoon black pepper
  • 1 tablespoon oil
  • Salt to taste

Orange sauce

  • Juice of one orange
  • Juice of half a lemon
  • 2 tablespoons maple syrup
  • 2 tablespoons tamari/soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon chili sauce
  • 1” ginger grated
  • Salt to taste
  • 1 tablespoon cornflour

Preheat your oven to 200c. Line a baking sheet and keep aside. In a large mixing bowl combine your cauliflower and Aquafaba and toss to mix. Now sprinkle over the rest of your cauliflower ingredients and toss again until each floret is well coated. Bake for 20 minutes until slightly golden.

In the meantime prepare your sauce ingredients by whisking everything together. Take your cauliflower out of the oven, pour over the sauce, and mix all the pieces to coat. Return the baking tray to the oven for a further 20 minutes until the sauce has caramelised over the florets and they’re lovely and golden.

*Aquafaba It’s the liquid that you get in a tin of chickpeas. Reserved and used in place of eggs for many dishes, including cakes and bread and the most wonderful is a vegan meringue. Whisked to form stiff peaks, and baked on a low temperature and you have macaroons without any egg!
