No-Bake Snickers Bar

These Healthy Snickers Bars will satisfy any sweet tooth! We can't get enough of these treats. They work like magic to keep those sugar cravings down.

Base 

1 cup rolled oats
1 cup cashews
1 cup almond meal
1/2 cup toasted buckwheat
1 teaspoon vanilla extract
2 tablespoons maple syrup
2 tablespoons coconut oil
A couple of tablespoons of water to bring the dough together if it’s too dry.

Caramel

2 cups dates pitted
2 tablespoons peanut butter
1 tablespoon coconut oil
1 teaspoon vanilla extract
1/4 cup water to mix (or slightly more, but you don’t want your caramel to be too runny)

Chocolate to drizzle over

1/2 cup cacao powder
2 tablespoons maple syrup
2 tablespoons coconut oil

Method


To make the base add your oats and nuts to your food processor and pulse until broken down into small pieces. Add in the rest of your ingredients and pulse to combine into a sticky dough. Turn this out into a lined baking tray and freeze as you prepare your caramel.

To make the caramel combine all your ingredients in a high-speed blender and blend TIL smooth and creamy. Spread this over your prepared base and freeze for at least four hours. Top with your chocolate sauce and crushed peanuts and slice as desired
